While studying, you will also be asked to demonstrate what you have learned by participating in class activities that may include the following:
- Recognizing PECs needed in fish processing
- Recognizing and understanding the market in fish processing
- Creating new business ideas in fish processing
- Preparing equipment, tools, materials, and utensils
- Preparing the raw materials
- Mixing curing mixture and prepared materials in accordance with approved specifications and enterprise requirements
- Curing mixture at room temperature or refrigerated temperature at appropriate number of days
- Cooking drained cured materials in appropriate cooking medium
- Smoking the cooked and cured products according to specification
- Documenting daily production input according to standard operating procedures
